1812 Salute Viognier
During the War of 1812, the Chatham-Kent area was the scene of many hard fought battles. The forces of the British Empire and the Indian Confederation allies fought together to try and stop the advancement of the United States Army. The print “Battle of the Thames” by Edward William Clay, 1799-1857, is featured on the front label.

This special commemorative wine “1812 Salute” pays tribute to those on both sides, who fought so valiantly for their causes and recognizes their brave contribution as part of our local history.

Winemaker’s Notes:
Orchard meets garden in a glass! Tantalizing aromas of peaches and gardenias are balanced with a lush mouth feel and crisp finish.

Pleasant Pairings: Viognier offers intriguing food matches. Spicy Asian fare, grilled seafood and Emmentaler, Colby or Edam cheeses are all happy matches.

    Our Vinedressers White is one of our newest vintages in the “Vinedressers” series. Vivid straw-color, with delicate aromas of passion fruit along with a medium acidity.

    Grape Composition: 68% Sauvignon Blanc, 27% Viognier, 5% Chardonnay

    Even though technology has enabled us to produce wine on a larger scale, the art of wine making itself has remained very much the same. It is still a combination of soil, weather coupled with the skill of the individual winemaker which influences the outcome of each variety and vintage.

    Character: Exotic and fruity. Classic highly aromatic spring flowers and fruit nose. Dry, with a variety of nuances on the tongue and finish.

    Pleasant Pairings: Serve chilled, alone or with spicy foods such as Thai cuisine.

    Winemaker’s Notes:
    (vee-own-yay) A wonderfully floral white from the Northern Rhone valley, this grape carries a creamy mouth feel with notes of honey and stone fruits.

    Pleasant Pairings: This is a great wine with food! Spicy – but not hot – flavours, like ginger, turmeric and cumin are good partners here, as are game meats such as goose, turkey, and duck.

    Winemaker’s Notes:
    Transparent pale lemon white wine with a nose suggesting light florals and sweet apples. Our Lighthouse is an easy drinking dry white with a long clean finish. Lighthouse Viognier bathes your tastebuds with the aromas of sweet apples and pears followed by a suggestion of honey.

    Try it with hummus or emmental cheese. It marries well with chicken in a ginger and orange sauce served with basmati rice. It is also a natural with Thai coconut based curries or spicy Indian curries.

    Food pairing:
    The highly aromatic and fruit forward nature of the grape allows Viognier to pair well with spicy foods such as Thai cuisine or Vietnamese cuisine. The subtle floral notes in some wines made of viognier and vinified without the use of oak barrels tend towards the ones found in saké, thus making it a perfect match with sushi and sashimi. Viognier pairs equally well with many outspoken (French) cheeses.
