Deep garnet in colour with dark berry fruit, vanilla and ear notes. Expressive and powerful with highly concentrated flavours of rich cocoa and blackberry and a long and elegant finish with well-structured tannins.

Best paired with crusted rare beef tenderloin, prime rib, game and robust flavoured dishes.

Bricklayer’s Estate Wines at Colio Estate Wines

Winemaker’s Notes:
Our Cabernet Franc vines are in the oldest part of our vineyard, aptly named the Old
Farm. Soils here are rockier than elsewhere in the vineyard, allowing for good drainage
and healthy fruit and vines. Also in parts nearest to the moderating effects of Lake Erie,
the fruit is given the greatest opportunity to ripen properly, avoiding the bell pepper
aromas common in many Cabernet Francs made with less ripe fruit.

Colour: Medium purple
Bouquet: Savour the aromas of ripe berries.
Taste: Pronounced flavours of ripe blackcurrants, raspberries, and a smooth finish imparted on the wine by skilled oak aging.
Food Matches: Pair with game meats, steak and rosemary roasted lamb
Serve At: 15-18°C

This wine comes from some of the most exceptional terroir on the estate, known for producing excellent quality grapes. The fruit was isolated from the harvest for being especially concentrated in flavour and body, which allows it to hold up to skilled oak ageing.

This wine has been crafted from grapes grown on older vines and in the northern-most parts of our vineyard, where clay soils dominate. This leads to smaller berries that are highly concentrated in flavour.

Winemaker’s Notes:
Intense ruby red colour with garnet highlights as a result of fermentation on the skins. Aged in European oak barrels for 12 months, the bouquet reflects subtle oak with a slightly grassy fragrance and hints of raspberry. The flavour is full-bodied and dry with bell-pepper and berry notes followed by a soft tannic finish.

Pairing Notes:
Grilled mushrooms, vegetarian lasagne, roasted turkey, grilled swordfish, beef or lamb.

Colour: Burgundy rim leading to a deep crimson robe.
Bouquet: Perfumed nose, which draws you in with aromas of chocolate, spice, leather, black and white pepper and raisin all perched on ripe dark berries and a touch of sour cherry.
Taste: Mature, elegant tannins create the structure upon which aromas of blackberry, dark cherry and cassis rest and are grounded by underlying oak spice and white pepper. A long finish, full of raisin and date coupled with chocolate lingers tantalizingly on the tongue.
Serve at: 15º – 17º C
