Winemaker’s Notes:
The Baco Noir is a dark smoky wine nestled in a medium bodied bed of blackberry. Smooth enough to enjoy on it’s own this wine carries an excellent finish to savor with any dish you choose to whip up, and well priced enough to enjoy any evening of the week!
Serve with duck, venison, stroganoff, root vegetables.

Usually the nose is a good indication of the taste of the wine. This one may fool your senses.
When I first nosed this wine it was a bit shy but it had an interesting, almost fresh bread or yeast like note. It may have been the some secondary notes from an oak barrel or from whatever method it was oaked but it was different. I liked the nose and as I said the first taste really caught me off guard.
Taste was very fruit forward, I didn’t pick this up at all in the smell. Big … and I mean BIG acidity rocked my palate chasing the blackberry fruit taste around.
Tasted again a day later after the bottle had been open for some 20+ hours and noted a nice herbacous note in the taste. Acidity was still big.
This wine is not going to be for everyone. The acidity may just be a bit too bitter for some. Try it with pizza as it should cut into that acidity just enough to balance things out.
