This is Colio’s follow up to the fanastic 2005 CEV Sauvignon Blanc. A tuff act to follow but I think they did pretty good.
While Sauvignon Blanc is not meant to be cellared I tasted the 2005 vintage several years after it had been in the bottle. Letting it sit for a while brought out a few interesting characteristics that I didn’t find in this vintage.
Nose is classic Sauvignon Blanc. Citrus and fresh cut grass.
Taste gushes citrus, noted grapefruit and some lemon. Perfect balance with crisp, clean acidity and a moderate finish.
Almost classic Bourdeaux style expect it was missing more of the mineral notes. Mineral characteristic was there but was hidden a bit behind the acidity.
Noted a hint of tannin on the finish. Just a hint.
Overall …. one excellent wine that was very easy to sip on and enjoy.
