Like the pheasant, our Chardonnay grape vines have adapted well to the sun, soil, climate and latitude of Pelee Island.
These grapes were harvested in September when they had reached 20.1 degrees Brix. They were then fermented for two to four weeks in stainless steel tanks and then left to age for another 6 months in stainless steel tanks.
